Although this dish is great when the avocado is mixed up with the noodles, it does not present a pretty picture, so for photographic purposes I placed the mixture on top of the noodles. I do love the bright colours of this dish. It’s a plate full of sweet, creamy and spicy tastes too.
The great thing about making vegetable noodles with the spiralizer is that it is a quick and easy way to whip up a lunch or supper dish. Also a fun way for the children to get some vegetables! Who needs pasta anyway!
Beetroot Noodles with Spicy Avocado
INGREDIENTS
2 beetroot, peeled
1 avocado, peeled and stone removed
1 clove garlic, peeled and finely chopped
1 red chilli pepper, de-seeded and finely chopped
1 tspn lime juice
METHOD
- Spiralize the beetroot into thin noodles.
- Mash the avocado with a fork until soft, then add the remaining ingredients.
- Add the avocado mixture to the noodles and mix together.
- Eat and enjoy!
