I’ve used the broccoli stems in place of cabbage in this simple coleslaw recipe. Now that I have found out that these can be used instead of throwing them away, there’s no stopping me and my poor spiralizer has been crying out for a rest. Instead of grating the onion, you could add chopped chives or spring onions. Add other ingredients and make it your own.
INGREDIENTS
3 large broccoli stems (either grated or put through a spiralizer)
2 carrots, peeled (either grated or put through a spiralizer)
1 1/2 tspn grated onion
3 tblspn mayonnaise (use vegan mayonnaise to keep to a vegan dish)
1 tblspn lemon juice
1 tspn Dijon mustard
METHOD
- Mix all the ingredients in a bowl, then place in the fridge for 20 mins.
- Eat and enjoy! It’s that easy!
